Depending on the model of Macintosh you are using, Panther may be able to boot directly into Mac OS 9 — or, if you have more than one hard drive or a network connection, you may have access to bootable installations of different versions of Mac OS X. For example, I keep the current version of Mac OS X on one drive and the latest beta of the new version on my external FireWire drive.
You can switch between operating systems in System Preferences.
